About the brewery

Founded in 1849, Shimazaki Shuzo is a family-owned sake brewery in Tochigi Prefecture, renowned for its dedication to traditional brewing techniques and unique aging methods. The brewery is best known for its "Cave-Aged Sake" (洞窟熟成酒), which is stored and matured in a natural cave - an old wartime shelter that provides the ideal environment for long-term aging. This distinctive approach results in sake with deep, mellow flavours, setting Shimazaki Shuzo apart from conventional breweries.


While maintaining deep respect for classic sake craftsmanship, Shimazaki Shuzo continuously experiments with new brewing styles. The cave is open to the public, but what makes the Story of Sake experience truly special is the exclusive CEO-led tour of the cave and a guided Koshu tasting in a normally restricted area. As the son of the cave cellar's founder, the CEO shares firsthand insights into the family’s legacy, the inspiration behind cave aging, and the evolution of Shimazaki Shuzo’s sake.
